This is a simple recipe for keto beef jerky, which you can bake in the oven. The beef doesn’t need to be marinated. It is the slow cooking and spice mixture that give the jerky its amazing texture and flavor.

My favorite snack is jerky. It is delicious and filling. It’s difficult to find commercial brands without lots of sugar.

This homemade recipe is chewier than commercial recipes and tastes better. It also contains no sugar. It’s easy to prepare, aside from the thinly slicing of the beef. This is a very simple recipe that requires only a few ingredients. Since I learned how to make it I have avoided buying commercial jerky.

INGREDIENTS

To make keto beef jelly, you will only need to use a few ingredients. Below is the recipe card with exact measurements. Here is a list of the items you will need:

Flak steakAlthough it is a hard cut, this cuts has great beef flavor. It is tenderized by slow cooking. As explained below, it is important to cut it against the grain.

Season:I use black pepper, kosher salt and garlic powder. Other spices are possible to be used.

RECIPE TIP

If your meat has been partially frozen, it is easier to cut each strip of meat lengthwise into thinner strips.

This is why I use frozen meat in this recipe. It was partially defrosted in the refrigerator overnight. It’s usually not fully defrosted after 12 hours, but it’s still flexible enough to be able to be sliced into thin strips and then cut each strip into two smaller pieces.

To ensure they are soft enough for the next step of pounding, I let the slices rest at room temperature for about 15 minutes.

VARIATIONS & SUBSTITUTIONS

This recipe is great as it is. I almost always use the original recipe. You can experiment with the spices that you use. Although I prefer to use chili powder and garlic powder, there are many other spices you can try such as smoked paprika and cumin.

HOMEMADE JERKY STORAGE

This homemade beef jerky has one drawback: it must be refrigerated, which is a disadvantage compared to other products. It should be kept in the refrigerator for at least 4 days in an airtight container.

*Tip: Use partially frozen meat

This jerky is not as popular as commercial products. The final product must be refrigerated. It should be kept in the refrigerator for at least 4 days in an airtight container. I take it with me in an insulated lunchbox and ice packs. I eat it within two hours.
